Unemployment for me is a time of being super lazy and hungry all day long. I’m not entire unemployed – I work usually at my parent’s antique bookshop, but for now I got days off to do the research and write my master thesis. So I am home. I am home alone and hungry. Ah, and lazy. That’s why there is so many recipes in my notepad, and in my camera waiting to do sth with it. But I’m not. I’m too lazy. Anyway, because I have the pressure of writing my masters, I’m eating a lot. And thanks god it’s already spring, and I can eat a lot of fresh vegetables and fruits. Currently is an asparagus season, so I’m eating them all the time, cause they will be available only for a short time. So I ate asparagus with poached egg and hollandaise sauce, asparagus pizza, and today I opened my fridge and it was almost empty. Somewhere in the back I found Halloumi cheese, I also had still asparagus and some of fresh spinach leaves. So that is how I created tonight’s dish. And it was perfect. Be careful with salt, cause halloumi is salty itself, so I wouldn’t add anymore. Ah, and one more thing – the dish will be ready in less than 10 min!
ingredients for one portion:
- 3 slices of halloumi cheese
- several large spinach leaves (I guess I had 5)
- 4 asparagus
- olive oil
Wash and dry spinach leaves. Wash asparagus and cut off the woody ends. Cut halloumi into slices of thickness less than the pinkie 🙂 Heat the grill pan with a little olive oil. Put the cheese and asparagus. Fry for about 2.5-3 minutes per side. Remove from the pan to cool down slightly.
On a plate arrange spinach, cheese and asparagus. Tastes great drizzled gently with balsamico.
