Carrot and buckwheat vegan patties

It’s so hot in here, and there might be some meat in my fridge, but I don’t feel like eating it. There was a lot of buckwheat leftover from 2 days ago dinner. So I started to look for a good recipe. I have also a lot of carrots, although, for the recipe below, you will only need 2 medium-size.  I really like the best vegan blog in Poland called Jadłonomia, and she had the recipe for carrot and millet patties – that sounded perfect! She recommended making burgers out of it, but I didn’t have any buns and I was too lazy to make it by myself. So I ate the patties with tomato salad, and it was perfect! So that is how the carrot and buckwheat vegan patties were made – instead of millet I used buckwheat and everything else is almost the same as in her recipe.

Ah, one more thing, I don’t know about other countries, but in Poland, we have two types of buckwheat grain – the white one, and the roasted one (brown). As a child, I ate only the roasted kind, and I hated it so much. But a couple of years ago, my mum found the white version, which is not roasted and doesn’t have this annoying taste, I didn’t like. So if you hate buckwheat as I did, but you’ve never tried the white  type, try it, because buckwheat is super healthy and has a lot of minerals and vitamins.

Ingredients (12 patties):

  • 2 cups grated carrots (about 2-3 medium carrots)
  • 1 1/2 cups of cooked white buckwheat
  • 1/2 cup toasted sesame seeds
  • 1 small onion
  • 1/2 cup bread crumbs
  • 1/4 cup canola oil + a bit to fry onion
  • 3 tablespoons rye flour
  • 2 tablespoons soy sauce
  • 2 teaspoons coriander
  • 2 teaspoons parsley
  • 1 teaspoon dried ginger
  • 1/4 teaspoon chili
  • salt, pepper

Finely chop the onion and fry in oil until it becomes transparent. Mix all of the ingredients together. If it’s too dry add more oil (if too wet – more flour).

Try and, if necessary season to taste stronger.

Preheat the oven to 200 degrees (Celsius) and use the baking paper for the baking form.

Form patties and bake them 20-25 minutes. In the middle of baking time flip it over to the other side.

I ate patties with a simple tomato salad, but you might as well as Jadłonomia advise use them to prepare vegeburgers 🙂

    • Mój mięsożerca nie miał wyjścia i dostał na obiad. Powiedział, że nie spodziewał się, że kotlety bez mięsa mogą być takie dobre 😀
