Gingerbread cookies

I left swedish christmas atmosphere, where they have julstjarna in every window and christmas lights all over Lund, to come back home for Christmas. Here, I expected snow and our polish traditions, but it’s raining all the time, and it’s really difficult to feel this christmas aura. However, with my mom we have to prepare christmas dinner, which has to contain according to our tradition 12 dishes. We decided to start with gingerbread cookies. They’re crispy, fluffy and very tasty. After baking you can also paint them with a frosting, so they can look even more delicious. 

  • 150 g of honey
  • 75 g brown sugar
  • 25 g of butter
  • 2 teaspoons ground ginger
  • pinch of ground cinnamon
  • pinch of ground cloves
  • pinch of ground black pepper
  • 1/2 teaspoon ground cardamom
  • 375 g flour
  • 1 egg yolk
  • 1 teaspoon baking soda
  • 1 tablespoon of warm water
  • 50 g icing sugar
  • 1 teaspoon of lemon juice

In a saucepan heat the honey, butter and sugar, stirring until smooth. Stir in spices and cool down.

Sift flour on a pastry board, add the egg yolk and the contents of the saucepan. Mix. Add baking soda dissolved in one tablespoon of warm water and knead the dough.

Roll out the dough to a thickness of 1 cm. Cut it with cookie cutters and place on a baking plate covered with baking paper.

Bake at 160 degrees, about 10-12 minutes.

When cookies will cool down you can frost them.
Keep them in a airtight containter, so they won’t get wet.
