Bulgur with vegetables

With my flatmate, Sofia, we decided to start eating more healthy. After we gain some weight after christmas at home and the bad weather is taking away our energy, she has started weekly trainings at the gym, and I’ve started to think about some healthier (and hopefully – less caloric) recipes. I bought bulgur, which is a cereal food made from the groats of several different wheat species, most often from durum wheat, and vegetables. You can add each veggie and spices you like, we chose those which we could buy this time of the year.

Ingredients (for 4 people):
  • 1,5 cups of bulgur
  • 1 red onion
  • 1 yellow paprika
  • 1/2 orange paprika
  • 1 tomatoe
  • 1/2 zucchini
  • 2 cloves of garlic
  • 1 tsp tomatoe paste
  • 1 tbsp salt
  • 1-2 tsp hot paprika
  • 2 tsp sweet paprika
  • pinch of pepper
  • 4-5 cups of hot water
  • 2 tbsp olive oil
  • parsley
Chop onion and garlic finely. Cut the vegetables into a large cube. Preheat olive oil in a frying pan and fry the onion on it. Then add the vegetables and garlic. Fry them about 5 minutes. Then add the tomato paste. Mix. Pour the bulgur and fry for about 2 more minutes. Add 3 cups of water. Mix. Reduce gas and continue to stir the dish until all the water is absorbed. Add the spices. If bulgur is still a little hard add another cup of water (max 2 more).
Serve with chopped parsley.
