Bleu cheese salad, olives and dried tomatoes salad

Some time ago, inspired by Rynn’s recipe, I’ve opened my fridge and… bingo! Everything what I needed to make this salad was there. The recipe is easy as a pie, while the honey-balsamico dressing combined with camembert and gorgonzola taste amazing. I also add green olives, dried tomatoes and almonds, what makes it even more fantastic dish for lunch or dinner (but be careful – Sofia told me today, that in Spain they have the same superstition about eating cheese in the evening – you’ll have a nightmares! Right, Busz? :D)

Bleu cheese salad with olives and dried tomatoes
  • Mix of lettuce (or your favourite kind)
  • 50 g bleu cheese (I used Gorgonzola)
  • half of camembert
  • dozen of green olives
  • 5 big dried tomatoes
  • half a handful of peeled almonds
  • 1 tablespoon of honey
  • 2 tablespoons of olive oil
  • 1 teaspoon of balsamico
  • a bit of lemon juice
  • salt/pepper
Wash and dry the lettuce, rest of the ingrediens cut in pieces. On a small pan fry for a while almonds. 
Put everything in a bowl and mix it. 
Stir together all dressing ingrediens and add to a salad. Mix. 
After putting a salad on plates, sprinkle them with almonds.
