From the seaside we brought some smoked fish. My dad for fathers day got whitefish, and we bought for ourselves smoke baltic salmon and herring. There was no good weather at the seaside, but in Warsaw it’s so hot, that we just eat cold soups and salads. So this is one of the salad from summer’s menu. Check it out 🙂

Ingredients
- 2 handful of lettuce
- 4 small eggs
- 50 g smoked baltic salmon (can be also regular one)
- 1/2 cucumber
- 1 big tomatoe
- 1/2 yellow paprika
- 1/2 avokado
Dressing
- 2 tblsp of fresh pesto
- 1/2 tsp mustard
- 2 tblsp olive oil
- salt & pepper
- lemon juice
Recipe
Boil the eggs. Mix up all the dressing ingredients.
Wash the veggies. Tear lettuce, cut veggies. Mix with the dressing. Add eggs (cut on quarters) and cut pieces of salmon.
Serve with roasted bread or croutons.
