I guess everyone now lives with the coronavirus crisis. So as we. That’s why we need to improvise in the kitchen more then ever, since it’s advised to stay home and limit shop visits. And that’s what we do. So we had oyster mushrooms in the fridge and I decided to try frying them with za’aatar. That was really great idea – they turn out to be cold and crispy, full of flavor. Try yourself!
- 250 g oyster mushroom
- 1 tsp za’atar
- 1/2 tsp hot paprika
- 1 – 2 tbsp chopped parsley
- 1 – 2 slices of lemon
- salt and pepper
- rapseed oil
- 1 tbsp of olive oil
Clean mushrooms (better not wash it, if you need to – make sure to be completely dry) and cut them to flat pieces.
Stir za’atar paprika, olive oil, 1 tbsp of parsley, pepper and juice from 1 slice of lemon in a bowl. Add mushrooms and stir it really thoroughly.
In a meantime warm up the pan with oil and fry oysters on a medium heat couple of minutes on each site until golden and crispy.
After frying season well with coarsely ground salt, sprinkle with rest of a parsley and rest of lemon juice.
